Time on High: 3 to 4 hours Time on Low: 8 to 10 hours As a mom who works out of the home, this recipe is a staple in my meal rotation because it is super simple to make! I only need to put 4 ingredients into the Crock-Pot®! We have very full schedules as do most families and the Crock-Pot® allows us to participate in all of our activities and have a satisfying and delicious meal within 30 minutes of hitting the door!

Ingredients

3 to 4 Pounds of boneless, skinless chicken breast
1 Can of black beans drained & rinsed
1 Can diced tomatoes with jalapeno
1 Package taco seasoning
Shredded Mexican cheese, to taste
Sour cream, to taste
Pico de Gallo, to taste
Tortillas

Instructions

Place chicken breast in Crock-Pot®t. Mix the diced tomatoes and taco seasoning together in a small bowl and pour over the chicken. Lastly, place the black beans on top and cover and cook. About 1/2 hour prior to serving, shred the chicken with two forks then stir. Serve chicken mixture on tortillas. Top with Pico de Gallo, cheese, and sour cream as desired.
