
Delicious Slow Cooked Carnitas

Time on High: 6-7 hours This moist and mouth watering carnitas is sure to please. Cooking the meat in lard or bacon fat in a slow cooker for hours ensures deep flavors. You'll be surprised by the delicious end results, not to mention this is very easy to make.
Ingredients
2 ½ Pounds pork butt or pork shoulder (the more fat, the better)
2 to 3 oranges
4 cups lard or bacon fat
1 package of Taco Seasoning
Instructions
Cut the pork into large chunks (3 Inches by 3 Inches is good). Put the chunks in a large zip top baggie and add enough taco seasoning to completely coat the pork cubes. Refrigerate overnight if you have the time. This step adds a ton of flavor to the meat.
Remove pork from refrigerator and bring to room temperature. Using a large Crock-Pot® slow cooker add the lard or bacon fat to the crock pot and turn on high. Once the lard/fat has melted, add the pork. Cut the oranges into Quarters. Squeeze some of the juice into the lard/fat and add the rinds. Cover and cook for 6 to 7 hours stirring occasionally.
Using a slotted spoon, remove the pork and oranges from the Crock-Pot® slow cooker. You now have the most delicious carnitas you've ever tasted. If you want to crisp the pork, roast for several minutes under the broiler. Makes tacos, burritos and more of your favorites. This is also reminiscent of Cuban pork and could be used in your Cuban dishes calling for pork.
