Time on High: 6-7 hours This moist and mouth watering carnitas is sure to please. Cooking the meat in lard or bacon fat in a slow cooker for hours ensures deep flavors. You'll be surprised by the delicious end results, not to mention this is very easy to make.

Ingredients

2 ½ Pounds pork butt or pork shoulder (the more fat, the better)
2 to 3 oranges
4 cups lard or bacon fat
1 package of Taco Seasoning

Instructions

Cut the pork into large chunks (3 Inches by 3 Inches is good). Put the chunks in a large zip top baggie and add enough taco seasoning to completely coat the pork cubes. Refrigerate overnight if you have the time. This step adds a ton of flavor to the meat.
Remove pork from refrigerator and bring to room temperature. Using a large Crock-Pot® slow cooker add the lard or bacon fat to the crock pot and turn on high. Once the lard/fat has melted, add the pork. Cut the oranges into Quarters. Squeeze some of the juice into the lard/fat and add the rinds. Cover and cook for 6 to 7 hours stirring occasionally.
Using a slotted spoon, remove the pork and oranges from the Crock-Pot® slow cooker. You now have the most delicious carnitas you've ever tasted. If you want to crisp the pork, roast for several minutes under the broiler. Makes tacos, burritos and more of your favorites. This is also reminiscent of Cuban pork and could be used in your Cuban dishes calling for pork.

Amazingly easy, Amazing flavor

Have been experimenting each night with a different meat and a different Crockpot recipe, tried this one last night. Amazing! I had never cooked with lard before, so was a little hesitant, but it worked out great. I scooped the meat from the crockpot and let it drain through a strainer before transferring it to another dish to shred. Served with Lime-Cilantro white rice and Cuban black beans and my wife was in heaven. Meat was not bitter, was not greasy. Used orange juice vice orange peels and worked great. I recommend this to anyone wanting an easy meal with leftovers for lunch the next day! Slowly turning my wife into the envy of the lunch room with these dishes!

Extremely unpleasant

This was so bad I took the time to make an account to warn people. The flavor is so bitter and the meat gets ridiculously greasy. If you like to eat sorrow go for it, but otherwise do something better with your ingredients.

Due to gradual and even heating of a slow cooker, recipes featured on this site can be cooked in a range of slow cooker sizes. Most recipes can be accommodated in a slow cooker that is either one quart smaller or one quart larger than specified. If using a smaller sized slow cooker, please use caution when preparing your meal to prevent over filling. For smaller sauces and dips that call for 3 quarts or less, it is not recommended to alter the unit size. Crock-Pot® is a registered trademark and should not be used generically when referring to a ‘slow cooker’ within the recipes.
