Time on High: 3 Hours 30 Minutes to 4 Hours and 30 Minutes Country Chicken, Slow simmer chicken in a spice hardy tomato sauce. with smoked ham and epasote for a unique Mexican country taste. served with Mexican yellow rice also cooked in a Crock-Pot® slow cooker.


One whole chicken
5 Cups of chopped tomatoes
1 Cup of smoked ham
1 Large onion
2 Jalapenos
2 Able spoons of house seasoning salt, onion powder & garlic powder
4 Sprigs of epasote (if not avail use tarragon)
2 Tablespoons of tomato paste
Salt to taste


1. Season the chicken with the house seasoning and place in Crock-Pot® slow cooker
2. layered the ham, tomatoes, jalapenos, epasote (or Tarragon), and tomato paste, on top of the chicken. sprinkle salt and any left over house seasoning over.
3. Place in the Crock-Pot® slow cooker and cook on high for 2 hours and 30 minutes.
4. After 2 hours and 30 minutes uncover and layer the onions on top and cook for one more hour.
