Time on High: 1 to 2 hours Time on Low: 3 to 4 hours This quick-cooking one-pot dish is perfect for a warm summer night. Full of vegetables, chicken, sausage, and whole grain penne. It's fast and healthy to boot!

Ingredients

13 1/4 Ounces whole grain penne pasta
28 Ounces Italian seasoned diced tomatoes
12 Ounces fully cooked sun-dried tomato chicken sausage, sliced
8 Ounces button mushrooms, sliced
4 Cloves garlic, minced
1 Cup chopped red onion
1 Cup sliced zucchini
1 Teaspoon oregano
1 Teaspoon basil
1 Teaspoon sea salt
1 Teaspoon black pepper
1 Cup crumbled feta cheese

Instructions

Place uncooked pasta in a colander and rinse thoroughly. Pour rinsed pasta into an 8 Quart Crock-Pot® slow cooker.

Place all ingredients except feta cheese in Crock-Pot® slow cooker with pasta, stirring until combined. Cover and cook on high for 1 to 2 hours, or low for 3 to 4 hours, stirring halfway through cook time.

Once penne is tender, remove lid and stir in feta cheese. Let pasta sit for 5 to 10 minutes before serving.
