Ingredients

1 ½ Cups marinara sauce
1 Pound precooked polenta log, cut into ¼ inch thick rounds
8 Ounces bulk spicy Italian sausage, casing removed
1 Cup roasted red peppers, thinly sliced
8 Ounces green beans, trimmed and cut into 1 inch pieces
¼ Cup finely grated Parmesan cheese
3 Tablespoons finely chopped fresh parsley

Instructions

1. Spread half of marinara sauce onto the bottom of the Casserole Crock™ stoneware. Arrange polenta slices in a single layer over the sauce. Top with bits of sausage, then peppers. Spread remaining marinara sauce over peppers, making sure all the polenta is covered with sauce. Top with green beans.

2. Cover; cook on LOW 5 to 6 hours or HIGH 3 to 4 hours or until sausage is cooked through and green beans are tender. Let stand 10 minutes before serving. Sprinkle with Parmesan and parsley.

Tip: For the best results, use a marinara sauce with a thicker consistency to avoid any excess liquid in the finished casserole. If you only have thin marinara sauce on hand, use only 1 Cup.

Due to gradual and even heating of a slow cooker, recipes featured on this site can be cooked in a range of slow cooker sizes. Most recipes can be accommodated in a slow cooker that is either one quart smaller or one quart larger than specified. If using a smaller sized slow cooker, please use caution when preparing your meal to prevent over filling. For smaller sauces and dips that call for 3 quarts or less, it is not recommended to alter the unit size. Crock-Pot® is a registered trademark and should not be used generically when referring to a ‘slow cooker’ within the recipes.
