Time on High: 3 to 4 hours Time on Low: 7 to 9 hours Our family loves this recipe especially since we are always on the run between school, practice, and lessons. Plus, I know my kids are eating healthy, home cooked food thanks to our Crock-Pot® slow cooker.

2 Tablespoons oil
3 Pounds boneless, skinless chicken breasts, cut into 1 inch pieces
1 Medium onion, chopped
1 Large green pepper, chopped
3 Cloves garlic, minced
1 Small jalapeno pepper, finely chopped
14 1/2 Ounces Mexican style diced tomatoes
1/4 Teaspoon cumin
1 Teaspoon oregano

Heat oil in skillet. Cook chicken pieces until browned. Remove and drain.
Place onion, green pepper, garlic and jalapeno pepper in skillet and saute until slightly cooked.
Add all ingredients to Crock-Pot® slow cooker and stir to combine.
Cover; cook on Low 7 to 9 hours or on High 3 to 4 hours.
Serve on flour tortillas.

Due to gradual and even heating of a slow cooker, recipes featured on this site can be cooked in a range of slow cooker sizes. Most recipes can be accommodated in a slow cooker that is either one quart smaller or one quart larger than specified. If using a smaller sized slow cooker, please use caution when preparing your meal to prevent over filling. For smaller sauces and dips that call for 3 quarts or less, it is not recommended to alter the unit size. Crock-Pot® is a registered trademark and should not be used generically when referring to a ‘slow cooker’ within the recipes.
