Basil and Tarbai Bean Pork Roast

Ingredients

2 Pounds pork roast
9 1/2 Ounces Tarbai beans
Onions
1/2 Ounce garlic
12 3/4 Ounces tomatoes
6 3/4 Ounces white wine
6 1/2 Ounces carrots
3 1/2 Ounces olive oil
Thyme and bay leaf, to taste
6 3/4 Ounces chicken broth
basil

Instructions

Soak the Tarbai beans in water overnight.
Brown the pork roast in olive oil in the Crock-Pot® slow cooker on the stove.
Once golden brown, add the diced onions and carrots, then the garlic (crushed only).
Before the vegetables are completely browned, deglaze with the white wine and reduce.
Transfer pork mixture to Crock-Pot® slow cooker.
Add the diced tomatoes, beans (well-drained and rinsed), the thyme, bay leaves, and add the broth just to cover the beans.
Cover; cook 6 hours on Low or on High for 4 hours.
Before serving, add the snipped basil.
