Red Beans and Rice

Time on High: 5 to 6 hours Time on Low: 10 to 12 hours This is a simple recipe that is great when you are busy enjoying life.

Ingredients

1 Pound dry, red beans
1 Medium onion, chopped
1 Small green pepper, chopped
3 Cloves garlic, minced
2 Cups water
1 Pound smoked ham, cut into 1-inch pieces
1 Teaspoon salt
1/2 Teaspoon hot pepper sauce
29 Ounces beef broth
3 to 4 Cups rice, cooked

Instructions

In a large pot, cover beans with 3 times their volume of water and bring to a boil.

Boil for 10 minutes. Remove from heat.

Cover and let stand for 1 hour and discard water.

Combine all ingredients except rice in the stoneware.

Cover; cook on Low 10 to 12 hours or on High for 5 to 6 hours.

Serve over hot cooked rice.

Red beans

This meal came out so good, took a little creative access with the seasonings and used Turkey ham instead of regular; but it was delicious.
