I love chicken salad and this easy homemade version is way better than using store bought or canned chicken. Enjoy!

Ingredients

4 Boneless, skinless chicken breasts
¼ Cup chicken broth
5 Teaspoons ranch seasoning & salad dressing mix
¼ Cup chicken broth
¾ Cup mayonnaise
4 Tablespoons chopped bacon pieces
2 Stalks celery, chopped
Toasted bread or roll of your choice

Instructions

1. Place chicken breasts in a 5 Quart Crock-Pot® slow cooker.
2. Pour broth over chicken and sprinkle with 1 Tablespoon of ranch seasoning & salad dressing mix.
3. Cover and cook on LOW for 4 hours.
4. After cooking, remove chicken and place on a cutting board.
5. Cut chicken into small pieces and/or shred (depending on your preference.)
6. Place chicken in a medium-sized bowl and add remaining ranch mix, mayonnaise, bacon pieces and celery.
7. Stir well to combine.
8. Serve immediately for warm chicken sandwiches or refrigerate for up to one day for a delicious chicken salad sandwich.

I want to make this recipe today but in the ingredients it mentions 1/4 cup chicken broth in two different places but only once in the directions. Please let me know if it is just 1/4 cup chicken broth and the other was a typo or what. Thank you and have a nice day.

I would really like to make this, but I do have a question. It call for 2 different 1/4c. of chicken broth. Where does the 2nd 1/4c. go (just above the mayo)? Thanks for any help you can give me. I have not made this yet.

Bacon Ranch Chicken Salad Sandwich

Great idea on cooking the chicken for the salad but I think I would prefer to substitute 1/4 cup chopped scallions for the bacon.
