
Mexican Chicken Soup

Ingredients
○ 6 cups chicken stock
○ 3 ¾ cups chicken, chopped
○ 1 ½ cups carrots, peeled and diced
○ ¼ cup red onion, diced
○ 4 tsps. garlic, minced
○ ½ cup roma tomatoes, diced
○ ¼ cup jalapeno peppers, dice
○ 1 ¾ cup tomato juice
○ 1 tbsp. cumin
○ 1 tsps. coriander
○ 1 tbsp. chili powder
○ 2 tsps. sea salt
○ ½ cup cilantro, chopped
○ 2 tbsp. lime juice.
Instructions
1) Place all contents into your Crock-Pot® slow cooker.
2) Cook on low for 6-8 hours.
3) Serve once chicken is tender and cooked through. If desired, garnish with extra lime, cilantro, or avocado slices. Enjoy!
