1 Teaspoon ground all spice
1 Teaspoon freshly ground black pepper
1 Teaspoon ground cinnamon
1/2 Teaspoon ground nutmeg
2 Teaspoons dried thyme
1/2 Cup scallions, finely chopped
3 Tablespoons soy sauce
2 Tablespoons fresh ginger


In a food processor, combine all of the herbs and spices with the scallions, soy sauce, fresh ginger, chile pepper, garlic, sugar, and salt, and process to a coarse paste. Coat the pork chops with the paste and place in the Crock-Pot® slow cooker. Cover and cook on high for 6 to 8 hours.

Recipe incomplete.

I have the book and was curious about the ratings before I made this. Well the full list is 1 tsp allspice 1tsb black pepper 1tsp cinnamon 2tsp thyme 1/2C scallions 3 TBS soy sauce 2 TBS grated ginger 1 habanero seeded and minced 2 TBS garlic 2 tsp sugar 4 1 inch thick pork chops.

Caribbean Pork Chops

The on-line Caribbean Pork Chops recipe is incomplete. The last five ingredients are missing. Fortunately I have the hard-copy Crock-Pot Cookbook and Owner's Manual and referred to the recipe on page 31 and got the missing ingredients. This dish is delicious but very, very spicy. I probably would have added more sugar or put in less hot pepper. It will be awhile before I try this one again.

Caribbean Pork Chops

The recipe was confusing. The ingredients did not call for sugar ot chili powder and the instructions did. I would have omitted the chili because I like spicy, not hot. They may have tasted better with some brown sugar. They were okay but nothing special.
