Almond Crusted Fish

Use tilapia or your favorite wild-caught white fish for this delicious dish.


• 2 fish fillets
• Olive oil
• 2 oz. grated bread crumbs
• 2 oz. Parmesan cheese
• 2 oz. almonds, chopped or ground
• ½ stick butter
• Salt and pepper, to taste

For the Sauce:
• 1 cup heavy cream
• 1 lemon
• ¼ cup white wine


1. With your Oster® blender or food processor, mix bread crumbs together with Parmesan cheese, almonds and butter until it forms a paste; wrap in plastic wrap and form into rectangles, the same size as the fish fillets.

Directions for the Crust:
2. In a pan greased with olive oil, place fish fillets seasoned with salt and pepper, and place on top the prepared rectangles.
3. Transfer to your Oster® oven and bake at 400˚F for 7 minutes.

Directions for the sauce:
4. Cook cream with lemon juice and white wine to a reduction. When ready, pour over fish fillets. Serve with asparagus and enjoy!
