• 1 boneless beef chuck roast (2 to 3 pounds)*
• 1 can (28 ounces) enchilada sauce
• 2 to 3 tablespoons water (optional)
• 4 (8-inch) flour tortillas
Place roast in Crock-Pot® slow cooker; cover with enchilada sauce. Add water, if desired. Cover; cook on LOW 6 to 8 hours. Remove beef to cutting board; shred with two forks. Serve in tortillas.
Serving Suggestion: Excellent garnishes include shredded cheese, sour cream, salsa, lettuce and tomatoes.
*Unless you have a 5-, 6- or 7-quart CROCK-POT® slow cooker, cut any roast larger than 2-½ pounds in half so it cooks completely.
